Winemaking | Hand harvesting in small baskets (10kg) on one layer. Grapes are cooled down to 5°C during 24 hours. Sorted twice (by grapes and berries). Alcoholic fermentation in barrels of 300 and 500 L with two punching down a day. 4 weeks maceration before a gentle pressing with a hand press. |
