Terroir | Selection of plots on high altitude terroirs, hard to work, with low yields and advanced maturity, where vine grows directly on the rock. Mediterranean climate (warm and dry), very windy with a maritime influence (Cove of Paulilles). |
Winemaking | Harvested by hand. Grapes are first sorting and destemmed before being put in stainless steel tanks where the alcoholic fermentation is done under temperature controlled (23-30°C). Grapes varieties are often co-fermented to win in complexity. It is also a reflection of our mosaic of plots. |
Food & Wine | Served at 16-18°C. Oriental and Mediterranean food, osso-buco , thyme flavored lamb. |
