Terroir | Vines on schistose terraces and/or slopes, worked by hand. Goblet pruning. Mediterranean climate (warm and dry), very windy with a maritime influence (Cove of Paulilles). |
Winemaking | Very ripen grapes are harvested by hand early in the morning to preserve all the aromas. They are then sorted and destemmed. Alcoholic fermentation starts and neutral alcohol is added over the cap (grape floating on the top of the vat) in stainless steel tank. Five weeks of maceration with daily pumping over to extract the best components of the skins (aromas, color, tannins). |
