Terroir | Vines on schistose terraces and/or slopes, worked by hand. Goblet pruning. Mediterranean climate (warm and dry), very wind with a maritime influence (Cove of Paulilles). |
Winemaking | Very ripen grapes are harvested by hand early in the morning, sorted and destemmed. Alcoholic fermentation starts in stainless steel tank and neutral alcohol is added. Five weeks of maceration with daily pumping over. Aged in glass demi-johns outside, facing the Mediterranean Sea, for 30 months. Climatic variations (sun & heat during the summer, cold & wind during the 2 winters) lead to oxidation and concentration (evaporation of both water and alcohol – angels’ share) of the wine. Bottling and storage in air-conditioned cellars. |
